This Vidal displays rich and concentrated notes of apricot, peaches and tropical fruits complimented by deep flavours of cinnamon and honey.
Food Pairing:
Enjoy this Icewine served at 12ºC either on its own or paired with peach cobbler or pineapple upside down cake.
Growing Season and Harvest:
The frozen Vidal grapes were harvested in early winter when temperatures fell between -10 and -13 during an unusual cold snap in the season. After settling the juice in stainless steel tanks, cool fermentation was completed in late-February when the wine was placed outdoors to stop fermentation and complete a natural cold stabilization.
