2021 Fumé Blanc x 3: We meticulously selected Sauvignon Blanc grapes from our finest vineyards. A portion of the wine was aged in French oak barrels to add complexity and texture while enhancing the wine's aromatic profile. The use of oak was carefully managed to maintain the wine's freshness and to avoid overpowering the delicate fruit flavours.

On the nose, an enticing bouquet of tropical fruits and citrus notes that carry through to the taste - providing a burst of juicy pineapple and tangy grapefruit flavours. The wine showcases a lovely texture, with a subtle creaminess and a bright acidity - keeping the palate fresh and lively.

This wine's herbaceous notes harmonize beautifully with asparagus.

2020 Barrel Aged Chardonnay x 3: A portion of the juice underwent fermentation in oak barrels - this technique added complexity and texture, enhancing its overall richness. Aged in oak barrels for an extended period, allowing the wine to develop nuanced flavours from the wood.

On the nose, a complex bouquet of ripe pear and baked apple, intertwined with notes of vanilla bean, toasted oak, and a touch of butterscotch. Fruit flavours from the nose evolve on the palate, with pear and apple being joined by a delicate touch of citrus and a subtle creaminess. The oak aging adds layers of vanilla and toasty spice.

The wine's richness and balanced acidity complement roasted chicken.
